Roasted Red Anjou Pears with Blue Cheese

Red Anjou Pears are red in color and often referred to as simply Red Pears at your grocer. They have a mild, sweet flavor with a creamy texture and an abundance of juice when fully ripe.

Pears and blue cheese are one of my favorite flavor combinations. A perfect mix of sweet and savory. The creamy texture of the pear and blue cheese just melts in your mouth. While the honey and apple cider drizzle bring everything together.

Start by cutting your pears in half and carefully removing the core with a melon baller or the edge of a spoon. Place your pear halves open-faced on a baking sheet and drizzle with your honey and apple cider mixture. Roast for 10 minutes or until the flesh has started to soften.

Carefully remove the baking sheet from the oven and spoon the crumbled blue cheese in equal portions into the core of each pear. Drizzle the remaining honey and apple cider mixture onto the pears.

Return to the oven to continue roasting for another 10 minutes. You want the pears to be fork tender and the blue cheese melted and golden brown. Serve along side your spring salad mix and toasted walnuts.

Ingredients

  • 2 firm but ripe Red Anjou Pears peeled, halved lengthwise, and cored
  • 3 tbsp honey
  • 3 tbsp apple cider
  • 1/4 cup crumbled blue cheese
  • 6 ounces spring mix salad
  • 1/4 cup walnuts toast

Instructions

  • Preheat your oven to 400 degrees F and place your oven rack in the middle of the oven.
  • In a small bowl whisk together your honey and apple cider until it is thoroughly combined. On a lined baking sheet place your pears cut side up. Drizzle pears with 1/2 of the honey and apple cider sauce and place in the oven to roast for 15 minutes.
  • Carefully remove the baking sheet from the oven and spoon the crumbled blue cheese in equal portions into the core of each pear. Drizzle the remaining honey and apple cider sauce onto the pears.
  • Return to the oven to continue roasting for another 10 minutes. You want the pears to be fork tender and the blue cheese melted and golden brown. Serve along side your spring salad mix and toasted walnuts.
