Ingredients

  • 3-4 medium zucchini
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tsp lemon juice
  • 1 oz. goat cheese
  • ½ cup toasted pine nuts
  • 2 tsp fresh sage chopped

Instructions

  • I used a cast iron grill to make this an easy indoor dish. Preheat to medium high heat. Using a mandolin or vegetable peeler, carefully slice the zucchini into long ribbons. Brush each ribbon with olive oil on both sides and grill in the skillet until you have grill marks, but the zucchini still keeps its shape, about 1-2 minutes on each side. Let the zucchini cool for 5 minutes and then arrange on your plate.
  • Drizzle with 1 tsp of olive oil and lemon juice. Then top with your pine nuts, lemon zest, sage and goat cheese.
