Taco Soup

As a busy mom, I am always looking for meals that can cook during the day and be ready to feed the whole family when we get home. There is nothing like being gone all day and walking into your home filled with the delicious scent of an incredible meal that’s ready to eat.

The great thing about this recipe is it can also easily be done on the stove top. So no matter what your needs are, this meal can meet them. Packed with veggies and tons of flavor, you have everything you need in one dish. The kids will have fun eating it with corn chips or tortilla chips, or eat it by itself for a lower carb option.

Another pro tip, this can also be a freezer meal!! You heard me right, all the best things in one easy meal.

Complete the first step of browning you meat and onions, then placed the cooled meat mixture into a gallon sized freezer bag with all of your other ingredients and store in your freezer. When you are ready for it, take it out and let it sit on the counter for about 15 minutes so it us thawed enough to remove from the bag. And then complete the next step (stove top or slow cooker) and you are on your way to a delicious meal.

Ingredients

  • 1 pound of ground beef
  • 1 cup diced onion
  • One 15 ounce can pinto beans
  • One 15 ounce can black beans
  • One 15 ounce can kidney beans
  • One 15 ounce can sweet kernel corn drained
  • Two 15 ounce cans diced fire roasted tomatoes
  • One 10 ounce can diced tomatoes and green chilies Rotel
  • 1 ounce packet of taco seasoning
  • half of a 1 ounce packet of ranch salad dressing mix
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • sour cream for garnish
  • grated cheese for garnish
  • green onions chopped for garnish
  • avocado slices for garnish

Instructions

Slow Cooker Recipe

  • Brown the ground beef and onions in a medium sized skillet and drain the excess fat. Place your ground beef and onion mixture into your slow cooker, then add your beans, corn, tomatoes, Rotel, taco seasoning, ranch salad dressing mix and spices and stir to combine.
  • Cook on low for 6 hours and serve warm garnished with your favorite toppings and chips on the side.

Stove Top Recipe

  • Brown the ground beef and onions in a medium sized stock pot and drain the excess fat. Then add to your ground beef and onion mixture your beans, corn, tomatoes, Rotel, taco seasoning, ranch salad dressing mix and spices and stir to combine.
  • Simmer on low heat for 1-2 hours and serve warm garnished with your favorite toppings and chips on the side.
