This Caprese Salad Dip is perfect for a summer afternoon on the porch. A delicious snack or a light compliment to anything you throw on the grill. It is what immediately came to mind when I started thinking of ways to use these beautiful tomatoes. Easier than your traditional caprese salad because everyone can join in with some toasty French bread rounds or crackers. I had some leftover French bread that I lightly oiled and put in the oven to broil for a brief few minutes until golden brown. Throw the rest of the ingredients in a bowl and enjoy!
Ingredients
- 8 ounces fresh mozzarella diced
- 3 medium tomatoes seeded and diced
- 2 cloves garlic diced
- 1 tbsp fresh basil chiffonade (shredded or finely cut)
- 1 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- This is an easy recipe. Just chop / dice as noted and throw it all in a bowl. Drizzle it with the olive oil and balsamic vinegar. Toss and done!
