Preheat oven to 375 degrees F.
In a medium bowl, mix the chicken, garlic, egg, bread crumbs, Worcestershire sauce, smoked paprika, grated onion, salt and pepper. Gently fold in the blue cheese crumbles.
Form into meatballs about 1 inch in diameter. Place formed meatballs onto a lined baking sheet and cook until the meatballs are golden brown and have an internal temperature of 165 degrees F, roughly 25 minutes.
While the meatballs are cooling go ahead and start your buffalo sauce. Melt the butter in a small pan over medium heat along with the minced garlic. Pour this, along with the hot sauce and salt into a medium sized bowl. Add in your meatballs and gently stir to sufficiently cover the meatballs with the buffalo sauce.
Serve with toothpicks and eat by themselves or dip in the blue cheese dipping sauce. To make the blue cheese dipping sauce simply combine all of the ingredients in a small bowl until combined, stirring while keeping some of the blue cheese crumbled intact.
