Prosciutto, Fig and Goat Cheese Flatbread with Thyme and Honey

I love how versatile naan flatbreads can be. They make a boring week night dinner fun. Dress them up however you like, pop them in the oven and in 10 minutes you have a delicious meal. The kids had a classic mozzarella cheese and pepperoni version, while my husband and I enjoyed a more grown up version of prosciutto, fig and goat cheese.

Ingredients

  • 1 mini naan flatbread
  • 1 tbsp olive oil to coat
  • 1 oz goat cheese
  • 1 oz prosciutto
  • 1 dried fig sliced
  • 1 tsp thyme leaves with stems removed
  • 1 tsp honey

Instructions

  • Pre-heat your oven to 375 degrees and lightly coat your naan with olive oil. Crumble creamy goat cheese, sliced figs and prosciutto on top. No measuring of ingredients needed, do what feels right to you. Bake in the oven for 10 minutes until the cheese is soft. Sprinkle on top a small amount of whole thyme leaves removed from the stems and drizzle with honey. Let them cool for a few minutes and enjoy warm.

PS – Olive oil toasted naan topped with honey may be one of my favorite snacks.
